To lie in bed a little longer, resisting the urge to turn on my phone, and I read.
To linger even longer and enjoy snuggles with my littlest while I drank my coffee.
To say yes when he disappeared and then reappeared with a book for me to read, even though I wanted to continue reading my own book.
To lie back and listen as my third child joined us in the bed and the two little boys nattered about what they’d choose.
To create the breakfast they had chosen from the book, (delightful husband cooked).
To tell delightful husband I love him.
To eat 2 pancakes instead of one.
To remind myself of the places reading can take you.
To act with intention.
And to ever so briefly slip away, reflect and capture the joy of choosing to be present, for real.
Greg’s perfect pancake recipe:
- 1 cup of S R Flour (otherwise you get crepes)
- 1 egg
- 1 cup of milk
- 50g of butter (the real stuff)
We double the mix because there are 6 of us.
Heat the pan to medium, must be warm or the pancakes stick, a tiny amount of butter should melt as you add it to the pan. Flip once the bubbles appear, the second side won’t take long.
Served here with berries and maple syrup.
Anything goes, add apple to your mix, add sultanas (my mum adds both), top with fruit or jam, lemon and sugar, you choose.
